Richards opened the Rumford Kitchen at the 1893 World’s Columbian Exposition in Chicago. The demonstration kitchen “scientifically fed” 10,000 expo visitors a nutritionally balanced lunch for 30 cents each (about $6.50 in 2007 dollars).
