Chef Grant Achatz's Hamachi: Don’t Try This at Home

Achatz himself dots plates with beads of buttermilk pudding and blanched peanuts, which look almost the same, and with blackberry beads; then he drizzles on blackberry sauce and randomly places sprigs of tarragon in pudding beads to make a textile-patterned bed for the hamachi.
